CHEESECAKE CHERRY PIE

(from Pillsurys Bake Off Dessert Cook Book)

1 cup flour

2 Tbs sugar

1/8 tsp salt

½ cup butter, softened

1 can (1 lb. 5 oz.) prepared cherry pie filling

 

Cheesecake Topping

 

6 oz. cream cheese, softened

1 egg

1/3 cup sugar

½ tsp vanilla

 

OVEN 350                        9 pie pan

 

In a small bowl, combine flour, sugar and salt.  Cut in butter until mixture is crumbly.  Press into bottom and up sides of 9 pie pan.  Pour cherry pie filling over crust.  Spoon on Cheesecake Topping.  Bake at 350 for 30 to 35 minutes until topping is firm (and slightly brown at edges).  Chill thoroughly before serving.

 

Cheesecake Topping: In a small mixer bowl, combine all ingredients.  Beat at high speed until well blended.
