This chocolate layer cake has a good chocolate flavor. The cake is delicate and can be a little difficult getting out of the pan, frosting, and cutting. But if youre careful handling it, its certainly worth making.
½ cup (1 stick) butter
4 ounces unsweetened chocolate
2 cups buttermilk (if you dont have buttermilk - and who ever has buttermilk? - you can either use buttermilk powder or you can add 1 Tbs lemon juice or white vinegar to regular milk and let it stand for a few minutes)
2 eggs
2 tsp vanilla
2 ½ cups flour
2 cups sugar
2 tsp baking soda
1 tsp instant coffee
½ tsp salt
Oven 350 2 9 round pans
Over low heat, melt together the butter and chocolate. In a large mixer bowl beat the buttermilk, eggs, and vanilla. In a separate bowl, sift together the dry ingredients and mix into the buttermilk/egg mixture. Blend in chocolate mixture. Pour into 2 9 round pans. Bake at 350 for 30 to 35 minutes. Let cool in pan about 10 minutes and then turn out on a rack. Let cool completely before frosting.
