If an award existed for the most perfect cake on earth baked in a 13x9 pan, this one might win. It would certainly have my vote. Not only is it incredibly easy to make, but you dont even need to grease the pan. Despite everyones aversion to nuts, I think the cake tastes better with them.
Combine ingredients in a large mixing bowl in the order given:
2/3 cup oil
¾ cup unsweetened cocoa
¼ cup oil*
2 eggs unbeaten
2 cups sugar
2 ½ cups flour
1 tsp baking soda
½ tsp salt
1 tsp vanilla
1 ½ cups cold water
Beat together with mixer for 3 minutes at medium speed. Pour into an ungreased 13x9 pan. Sprinkle the top with:
1 cup chocolate chips
1 cup chopped nuts
Bake 350 45 to 50 minutes. Cool in pan.
*I have often wondered why all the oil is not added at once. Although I believe it would make no difference, it seems sacrilegious to change the recipe.
