This is a very easy chocolate layer cake. Unfortunately, the taste and texture arent first rate. However, if you dont have a lot of time or a lot of energy, this cake works just fine.
2 cups flour
1 ½ cups sugar
½ cup cocoa
½ tsp salt
2 tsp baking powder
¼ tsp baking soda
2 eggs
1 tsp vanilla
½ cup vegetable oil
1 cup milk
½ cup boiling water
Oven 350 2 9 round pans
In a large bowl,sift together the dry ingredients. (Its important not to skip this step in this cake. You dont use a mixer and even with sifting, the flour tends to clump together.) To the dry ingredients add the eggs, vanilla, oil and milk and mix well. Stir in the bowling water. Pour into 2 greased and floured 9 round pans. Bake at 350 for 30 to 35 minutes. Let cool in pan about 10 minutes and turn out on rack. Cool completely before frosting.
