I am fonder of this cake than anyone else seems to be. I think its because poppy seed cakes are not universal favorites. I am willing to believe that the party cheese ball is a loser, even though I like it, but I truly believe this is a great recipe.
2 cups sugar
3 eggs
1 cup vegetable oil
3 cups flour
½ tsp salt
1 ½ tsp baking powder
1 cup milk
1 tsp vanilla
1 tsp almond flavoring
2 Tbs poppy seeds
Oven 350 10 bundt pan
In a large mixing bowl, beat together the sugar and eggs for 2 minutes at medium speed. At low speed, add the oil in a slow stream, then beat at medium for 1 minute. Sift together the dry ingredients and add alternately with the milk, vanilla and almond flavorings - beginning and ending with the flour mixture. Stir in the poppy seeds. Pour into a greased and floured 10 bundt pan and bake at 350 for 55 to 60 minutes. Let cool about 20 minutes and then turn out onto a rack.
